“Olive Mill Waste” Book Presentations & Author Team Acknowledgments
After its launch five months ago, the Olive Mill Waste book is continuously raising interest among researchers, academics, students, professionals and industrial partners activated in the field.
Trying to catch up with colleagues, meet our audience as well as explain in details the key features and hints of the book, an online book presentation was organized on 4th April 2017 by ISEKI Food Association (IFA) watched live by hundreds of colleagues around the world. All these activities are organized by the FWR Group and volunteering actions of experts in the field. Therefore, I would like to take this opportunity to thank all group members and authors’ team for their fruitful collaboration and high quality work in bringing together different topics and technologies in an integral and comprehensive text.
About the Authors
Dimitris Vayenas (co-authoring Chapters 7 and 8) is a Professor at the Chemical Engineering Department, University of Patras, Greece. Professor Vayenas researches biological and physico-chemical treatment of potable water, industrial and agro-industrial wastewater treatment, mathematical modelling and analysis of chemical and biochemical engineering systems, natural attenuation of soil and ground water, solid waste management, and bio-diesel production. Since 2010 his research focuses on the treatment of olive mill and dairy wastewater to develop processes and methods for wastewater degradation or their exploitation and recovery of useful substances. To this end, biological filters, constructed wetlands and electrochemical methods have been used for wastewater degradation, while microalgae have been used for wastewater degradation and simultaneous biomass production and nutrient recovery. Professor Vayenas has authored or co-authored 90 publications in international peer-reviewed scientific journals, three books, and he is a reviewer for more than 85 international scientific journals.
Beatriz Oliveira is a group research leader at LAQV@REQUIMTE, being involved in several research projects with industries, having a vast experience in supervising Doc and Postdoc researchers. Her research activities are focused on environmental sustainability, food safety, security and authentication. In particular, the re-use and valorization of food by-products are one of the main targets of her research. She published more than 300 papers, 36 book chapters, 1 patent and edited 1 book.
Francisca Rodrigues, main supervisor, is a researcher at LAQV@REQUIMTE. She graduated in Pharmaceutical Sciences at Faculty of Pharmacy of University of Porto (UP) in 2008, and finished a Master in Quality Control (UP) in 2011. Afterwards, she followed her post-graduate studies and finished her PhD in Pharmaceutical Sciences (UP) in 2016.In the meanwhile, she worked with the regulatory department of Portuguese companies where acquired a deep experience on the field of regulation, cell culture and in vivo studies. Her current research is focused on food by-products and their potential applications. Particularly, her expertise is in the field of in-vitro/ex-vivo/in-vivo evaluation and characterization of by-products. She published 24 papers in international peer reviewed journals, 10 book chapters and co-supervised 5 MSc students (2 completed) and several graduation students.
M. Antónia Nunes has a Degree in Nutritional Sciences (Faculty of Nutrition and Food Science, University of Porto) (2007) and an MSc in Consumer Sciences and Nutrition (Faculty of Sciences, University of Porto) (2012). She has professional training in Environmental, Food Safety and Quality Management Systems and Audits. She develops research activities at LAQV@REQUIMTE focusing food chemical analysis, recovery of bioactive compounds of the agro-industry by-products, R&D of new products, and the bioaction of selected compounds in human health. She is author and co-author of 7 papers in international peer reviewed journals, 5 book chapters, and 1 patent in the field agro-industry by-products valorisation.
Prof. Konstantinos Komnitsas holds a PhD degree in Hydrometallurgy (1988) and is, since 2003, the director of the Laboratory of Waste Management and Soil Decontamination at TUC, http://www.mred.tuc.gr/index.php?id=4250. He is an expert in the fields of hydro- and bio-hydrometallurgy, industrial and agricultural waste management and valorization, new materials, soil decontamination, environmental risk assessment and LCA studies. Prof Komnitsas has participated in more than 50 research projects (funded from EC and national sources). He has served twice as national representative for previous European Commission (EC) Framework Programs, frequently evaluates research proposals for the EC and national foundations of several countries and is a member of the editorial board of 3 journals. He has published more than 90 papers in peer reviewed journals.
Dr. Maria K. Doula is a Chemist, holding M.Sc and PhD degrees in Chemical Technology in the field of Soil Pollution. She is an Associate Researcher, Head of the Laboratory of Non-Parasitic Diseases, Department of Phytopathology in the Benaki Phytopathological Insitute, Athens, Greece. Dr. Doula has published 37 peer-reviewed papers in academic Journals, 45 announcements in international conferences and 7 book chapters on environmental quality, soil science, water quality and treatment, waste management and reuse in agricultural sector, composting, soil/water/plants analysis, sustainable agriculture, Mediterranean agricultural systems, desertification in Mediterranean and adaptation measures, EU soil-waste-water policy. She participated in many EU and national projects as coordinator or member of the research team, she frequently evaluates research proposals for the EC and national foundations of several countries and is a member of the editorial board of 3 journals.
Apostolos Sarris holds a B.A. in Astronomy & Physics (1985) and an M.A. in Physics (1988) from Boston University and a M.Sc. (1990) and a Ph.D. in Physics/Geophysics (1992) from the University of Nebraska-Lincoln. He is Reasearch Director & Debuty Director of IMS-FORTH and Head of the Laboratory of Geophysical-Satellite Remote Sensing and Archaeo-environment (GeoSat ReSeArch Lab) of IMS-FORTH and at the same time a contracted lecturer of the Aristotle University of Thessaloniki and a Research Associate of the Dept. of Anthropology, The Field Museum of Natural History of Chicago, Illinois, USA. Apostolos Sarris acted also as a vice-president of the European Section of the Archaeological Remote Sensing Consortium (A.R.S.C.), as an assistant Greek representative in the scientific committee for Peace and Security of NATO and as Vice-Chair of the International Society of Archaeological Prospection (ISAP). He is currently president of CAA-GR, member of UISPP Commission IV, and associate editor of the Society for Archaeological Sciences Bulletin, Archaeological and Anthropological SciencesJournal and of Archaeological Prospection Journal. Dr Sarris has more than 250 publications (including 1 Ph.D. dissertation, 42 chapters in books, 2 Proceedings Volumes, 110 refereed journal papers, and 120 refereed papers in books of proceedings), 125 technical reports and 3 technical guides/notes, and more than 280 Oral & 100 Poster communications in 85 international and 75 national conferences). His teaching experience include contracted Lectureships at various institutions (Graduate: 1995-2008 Dept. of Geology, Aristotle Univ. of Thessaloniki; 2002-2004 Dept. of History & Archaeology, Univ. of Crete; 2002-2003 Dept. of Philosophy & Social Sciences, Univ. of Crete; 1998-2000 Dept. of History & Archaeology, Univ. of Crete. His Lab is part of the Association of Geographic Information Laboratories of Europe (AGILE), European Association of Remote Sensing Laboratories (EARSEL) and of EPOCH consortium.
Eulogio Castro holds a Ph.D. in Chemical Engineering from the University of Granada, Spain, where he also worked as a teacher in undergraduate and graduate studies in Chemistry and Chemical Engineering. Since the foundation of the University of Jaén (1993) he has served as a teacher and researcher and currently he is a Full Professor of Chemical Engineering. He was also Invited Researcher at the École Nationale Supérieure de Chimie de Toulouse, France, and Visiting Assistant Professor at the University of Florida, USA. His main research interests are focused on the conversion of biomass into biofuels and other added-value products and the techno-economic and environmental issues related to the development of the biorefinery concept.
Tekerlekopoulou Athanasia (co-authoring Chapter 7 and Chapter 8) is an Assistant Professor at the Department of Environmental and Natural Resources Management, Polytechnic School of the University of Patras. She graduated from the Department of Chemical Engineering at the Aristotle University of Thessaloniki and she received her PhD degree in Environmental Engineering from the University of Ioannina. Her research focuses on potable water and wastewater treatment using physicochemical and especially biological processes. In addition, she has an interest in process modeling for the rational design of effective and economic systems for drinking water and wastewater treatment. Dr Tekerlekopoulou has over 30 published research or reviews articles in international journals with high impact factor, 4 book chapters, 50 presentations in conferences and over 300 citations in scientific literature. She has participated of 5 research projects and she has received several awards, highlighting the Hellenic Federation of Enterprises/Eurobank competition “Greece Innovates” for applied research and innovation (Distinction in the category “innovation” for the design and operation of the biological filter for potable water in the village of New Vouprasio, Achaia, Greece, 2011).

Dr. Tania Pardo is a PhD in Environmental Sciences since 2013. She developed her PhD thesis in the Department of Soil and Water Conservation and Organic Waste Management of CEBAS-CSIC (Spanish Research Council, in Murcia, Spain). Currently she is contracted researcher thanks a postdoc grant “Juan de la Cierva-Formación” (financed by Spanish Ministry of Economy and Competitivity), in the group of Microbiology of the department of Soil Biochemistry of the Instituto de Investigaciones Agrarias de Galicia (IIAG-CSIC) in Santiago de Compostela (Spain) since January 2016. Her previous and current researches have been focused on the remediation of trace elements polluted soils through phytotechnologies with the aim to reduce the toxicity and dissemination of TEs in situ, promote soil natural processes, and at the same time, the revalorisation and recycling of wastes as amendments. In this sense, she has studied of the suitability of different organic (composts, OMW, pig slurry, digestate, biochar) and inorganic amendments (Fe oxides, nano-oxides, lime, red mud derivatives, etc.), alone or in combination, and several plants species, assessing their effects on soil functioning and its potential associated risks. Additionally, her main current studies are focused on the optimization of cropping systems of Mediterranean Ni-hyperaccumulating plant species to produce Ni-rich biomass for phytomining purposes, improving plant productivity and enhancing soil fertility and quality.
Dr. Primo Proietti in 1984 Graduated in Agricultural Science with full marks and honours (1984). He received his PhD in 1988. At present, he is a Professor at the University of Perugia where he is Coordinator of the Research Unit “Tree crops” in the Department of Agricultural, Food and Environmental Sciences. He is responsible for numerous research projects, among which EC Projects Life+ (OLIVE4CLIMATE) and FP7 (RESOLIVE). Research activity, documented by about 300 papers (ORCID 0000-0002-6575-7675), concerns: eco-physiology of fruit trees, olive-oil by-products, CO2 sequestration in olive groves, buffer strips, oil quality, etc. and has been awarded several scientific awards. He is a referee for national and international scientific journals and projects, and as chairman, organized many congresses and since 1990 has lectured in several courses in the University of Perugia and Malta. He is also a member of Committees for PhD Students and coordinator for agronomic area in the international master “Olive Growing and Olive Oil Technology”. Membership of Accademia dei Georgofili, ISHS, SOI, Accademia Nazionale dell’Olivo e dell’Olio, etc.
Dr.-Ing. Paris A. Fokaides studied Mechanical Engineering at the Aristotle University Thessaloniki, in Greece and delivered his PhD study at the Engler Bunte Institute of Karlsruhe University, Germany, in the field of combustion techniques. He has been a research associate at the University of Cyprus from 2008-2012 in the field of sustainable energy technologies and the built environment and since 2012 he is a Lecturer at Frederick University, in Cyprus. As of early 2017 Dr Fokaides is the author of more than 50 Scopus referred scientific journal papers and book chapters in the field of sustainable energy technologies and the built environment. Dr. Fokaides has also participated in numerous research projects as principal investigator and coordinator in the field of sustainable energy technologies, with emphasis on biomass and biofuels. He is founding member of the European Biomass Research Network, and he is nominated as the representative of Cyprus in the SET Plan Renewable Fuels for Sustainable Transport / Bioenergy working group.
Dr. Ioanna Vasiliadou received her Degree (2004) and PhD (2008) both from the Dep. of Environmental and Natural Resources Management, University of Ioannina, Greece. Since 2008 she has been working as postdoctoral researcher in Chemical and Environmental Engineering Departments, in Greece, Spain and Italy. Currently, she works as postdoctoral researcher awarded by the International Excellence Program of Rey Juan Carlos and Alcalá Universities of Madrid. She is the author of 24 peer-reviewed articles in International scientific journals (citations: 516, h-index: 10), one book chapter and 31 conference proceedings publications. She serves as peer reviewer for 27 Journals. She has been participated in 5 research projects and has been awarded 5 personal competitive postdoctoral research grants (e.g. Marie Curie Actions fellowship). Dr. Vasiliadou´s research has focused on the field of Environmental Engineering, including: i) Designing and optimization of bioreactors for water and wastewater treatment, ii) Advanced bio-oxidation processes for wastewater treatment, iii) Sewage sludge use for Biodiesel production, iv) Sludge minimization during wastewater treatment, v) Resources and energy recovery from wastewater and vi) Soil and groundwater bioremediation. The development of mathematical models capable of describing processes considered in environmental bio-engineering schemes represents one of the main topics of her research field.
Dr. Federico Tinivella is an agronomist and extension plant pathologist. He received his MS in agricultural sciences from the University of Torino (Italy) in 2001 and his Ph.D. in plant pathology from the same University in 2006. He spent different periods of study abroad in Sweden, Denmark and US. His field of research was focused on sustainable agriculture with specific regards to seed treatment and disease control of key vegetable crops of the Mediterranean area. He served for 4 years as coordinator of the Italian review about crop protection “Informatore Fitopatologico – La Difesa delle piante” edited by Il Sole 24 Ore Edagricole s.r.l. Since 2006 he is working as senior staff at the Center for Agricultural Experimentation and Assistance (a special agency of the Chamber of Commerce of Savona, Liguria, Northern Italy) as project manager being the following the main topics: sustainable management of crops, food safety, adoption of renewable energy sources in the agricultural sector, set up of best practices for agricultural wastes treatment and reuse in agriculture.
Dr. Luca Regni, in 2011 Graduated in Agricultural Science with full marks and honors. 2013 started PhD on the implication of the agronomic use of pomace with particular attention to gas emissions, microbial populations and carbon sequestration. Research activity, documented by about 32 scientific papers concerns:, olive-oil by-products, eco-physiology of fruit trees, CO2 sequestration in olive groves, buffer strips, oil quality, biofortification of olive and vitis with selenium etc. He is the winner of two scientific awards and a member of SOI. He works in several international, national and regional research projects and is Co-advisor of about 10 thesis.
Dr. José Luis Moreno currently works in the Department of Soil and Water Conservation and Organic Resources Management at CEBAS-CSIC institute, where he is Tenured Scientific since 2006. Dr Moreno obtained his PhD degree in Chemistry by the University of Murcia in 1997. Then he was awarded with a Marie-Curie Fellowship by EU and spent two years in the Department of Soil Science and Plant Nutrition of the University of Florence in Italy. In this Department, he researched, under supervising of Professor Paolo Nannipieri, in the effect of heavy metal contamination on the soil microbial activity and specifically on both extracellular enzyme activities with a main role in the biogeochemical cycles of C, N and P and other biochemical parameters indicator of the soil microbial activity. Afterwards he came back to CEBAS-CSIC and was joined in the research team of Dr Carlos García where he contributes for developing the research line of soil enzymology and soil bioremediation in arid and semi-arid regions. He is principal author or co-author of more than 50 articles in SCI journals or book chapters.
Dr. Vassilis J. Inglezakis is Associate Professor of Chemical Engineering at Nazarbayev University. He is Chemical Engineer holding MSc degree in the field of Operations Design and Development (1996) and PhD degree in the field of Pollution Abatement Technologies (2002) awarded by the Chemical Engineering Department, National Technical University of Athens (Greece). In the period 2004-2007 he conducted his post doc research as lead researcher in the field of Environmental Science & Technology at the same university. He has published 54 Journal articles, 96 papers in international conferences, 2 books as main author (with Elsevier), 2 as editor and author and 4 more books as contributing author. His work has received more than 1700 citations in the related literature, he has an h-index 24 and he has been acting as reviewer in more than 39 academic Journals in Chemical & Environmental Engineering fields. DrInglezakis has considerable professional experience working in several European and non-European counties in technical, consultancy and research projects, assigned in several positions as Resident Twining Advisor (accredited by the European Commission), Project Leader, Lead Researcher and Short Term Expert, all in environmental and industrial-related fields; he has been involved in 36 projects in 15 counties, contracted by 22 different employers (1997-now). Finally, he has been project proposals evaluator for the European Commission in the framework of the LIFE and ERASMUS MUNDUS programme, the Executive Agency for Higher Education, Research, Development and Innovation Funding (Romania) and for the National Center of Science and Technology Evaluation (Kazakhstan).
Dr. Akratos is an Assistant Professor in the Department of Environmental and Natural Resources Management, in the University of Patras. He has a great experience in constructed wetlands as the theme of his doctoral thesis and the majority of his publications deal with wastewater treatment with constructed wetlands. Furthermore he has developed research activities in biological treatment industrial wastewater and solid waste management. He has authored or co-authored 23 publications in peer-reviewed international scientific journals and 1 in book (Total citations: 700. H-index: 13), Dr. Akratos has participated as a research team member in 14 research programs, which the majority of them deal with wastewater treatment.

Paloma Manzanares Secades is PhD in Biology by Complutense University of Madrid. She has over 25 years of professional experience in biomass production and utilization as renewable energy source. She has developed her scientific career in research Centers as the High School of Agricultural Engineers (ETSIA), the National Institute for Agricultural and Food Research and Technology (INIA) and the Center for Energy, Environment and Technology Research (CIEMAT), where she works currently as Senior Scientist in the Biofuels Unit of Renewable Energy Department. Throughout her career she has participated in more than 30 R&D national and international projects on biomass use for the production of biofuels and high-added value products, 11 of them funded by the European Commission. She is coauthor of 3 book chapters and 41 scientific publications as well as co-inventor of 2 patents. She has participated in more than 100 national and international conferences on topics of her expertise.
Dr. Abdelilah El Abbassi is a interdisciplinary scientist, with diploma and doctoral degrees from the Faculty of Sciences – Semlalia, Cadi Ayyad University (Marrakech, Morocco). He also holds a MSc degree in the field of ‘’Biodiversity Management’’ and a BSc degree on Plant Biotechnology from the same university. He conducted many research projects covering several different topics at universities in Spain, Germany, Japan and Portugal. His research targets mainly the recovery of functional and high added value compounds form agro-industrial wastewaters and food by-products, as well as the treatment of wastewaters using membrane technologies and green chemistry. He has published 19 papers in international peer-reviewed scientific journals, several papers in international and national conference proceedings and book chapters. He is currently an Assistant Professor at the Cadi Ayyad University (Marrakech, Morocco).
María José Negro (Co-authoring Chapter 3) is Senior Researcher at Centro de Investigaciones Energéticas, Medioambientales y Tecnológicas (CIEMAT, Madrid, Spain). Master of Biotechnology (1990) and PhD in Pharmacy by the Complutense University of Madrid-Spain (1991). Her research career has been developed in the Biofuels Unit at Renewable Energies Division of the Department of Energy of the CIEMAT. She has more than 25 years of experience in the development of biomass as renewable energy source. The main research areas include biological processes for energy production from biomass resources, micro-organisms research for biofuel production, fermentative processes and biomass pre-treatment processes.
Encarnación Ruiz (co-authoring Chapter 3, The biorefinery concept for the industrial valorization of residues from olive oil industry) is an Associate Professor in the area of Environmental Technologies at the Department of Chemical, Environmental and Materials Engineering of the University of Jaen. Her scientific activity has been mainly developed in the valorization of residual biomass for the production of bioethanol and other bio-products of interest. Her research activities have resulted in 37 peer-reviewed papers (all belonging to SCI journals, most part in the first quartile). She is also co-author of more than 80 communications in international scientific congress. She has supervised 4 PhD Thesis. She is an Associate Editor of the journal BioMed Research International.
Dr. Apostolos Vlyssides (co-authoring Chapter 6) has been a professor at the National Technical University of Athens (NTUA) in the School of Chemical Engineering since 2004. He is a chemical engineer and he has graduated from NTUA in 1976. After working in the industry for two years, he started his PhD research on the mathematical modeling of anaerobic digestion in thermophilic region. He obtained his PhD thesis in 1986. At the moment, he is involved with the modules of Design of Environmental and Clean Technologies and Industrial Engineering in the School of Chemical Engineering. Throughout the three decades of his academic career, Apostolos Vlyssides has published over 120 scientific papers, has invented 10 patents, and has supervised more than 20 doctoral theses. Also, he has participated in over 120 international and national symposia, giving numerous plenary lectures. Among his research accomplishments, the greatest impact on environmental science and technology has been through the development and pioneering of a novel anaerobic bioreactor design based on a granularity creation model. Moreover, AV has developed a novel co-composting process involving the treatment of wastewaters with agricultural solid residues (i.e. olive mill wastes with olive mill kernel). Currently, many industrial installations are working in Greece based on his inventions.
Dr. Anestis Vlysidis (co-authoring Chapter 6) is a chemical engineer and holds a PhD, since 2011, from the University of Manchester on the development of sustainable biodiesel biorefineries. After one year working as a post-doc in the University of Manchester, he returned to Greece and worked as a research associate at the Agricultural University of Athens in Dr. Apostolis Koutinas research group for four year 2012-2016. Currently, he is working as a research associate at the National Technical University of Athens in the Laboratory of Organic Chemical Tehcnology in the School of Chemical Engineering. He has participated in many National and European research projects (FP7, LIFE+, HORIZONS). His research interests focus on the development of novel technologies either chemical or biological for valorizing organic/food wastes. He has also implemented many sustainability studies on new process designs. AV is interested in examining new bioroutes that can lead to value added chemicals both by implementing/designing experiments and by simulating the examined processes and constructing techno-economic analyses and environmental assessments.
George Lamprou (co-authoring Chapter 6) holds a degree in Natural Resources Management and Agricultural Engineering from Agricultural University of Athens. During his professional career, he worked as a consultant with tobacco industry and companies of food and beverages’ supply chain. He has also participated as a scientific coordinator in small and large scale integrated pest management applications in local and regional level. Currently, he is a PhD candidate at the National Technical University of Athens in the Laboratory of Organic Chemical Technology in the School of Chemical Engineering. His basic research is on olive tree polyphenols and factors that influence them. His academic interests are the valorization of agricultural by-products and waste management technologies including the tertiary treatment of municipal and/or industrial wastewaters using aquatic plants.
Dr. Enrico Novelli graduated in Veterinary Medicine at the University of Parma in 1989. He had professional qualification in 1990. In 1995 he achieved the Ph.D title in “Hygiene, Chemistry and Technology of Food” at the University of Torino. He was contract professor of Biochemistry of meat and meat products at the Catholic University of “Sacro Cuore” (Food Science and Technology in Cremona) during academic years 1994, 1995 and 1996. From 1998 to 2002 he was researcher in charge at the Institute of “Hygiene and Veterinary Pathology” of the Faculty of Veterinary Medicine of the University of Padova. From 2002 to present he has been senior assistant professor of Food chemistry and biochemistry at the Faculty of Veterinary Medicine of the University of Padova. Since January 2012 he is afferent at the department of Comparative Biomedicine and Food Science of the University of Padova. He was visiting fellow at the department of “Lipides-Flaveur” of INRA of Nantes (F) and at the “Food Science” department of Queen’s University of Belfast (GB). He is author or co-author of more than one hundred publications on topics related to the quality of meat and meat products, lipid peroxidation in foods, fish quality and fish deterioration, food contamination by environmental pollutants, food authentication and food traceability.
About the Editor
Charis M. Galanakis is an interdisciplinary scientist with a fast-expanding work that balances between food and environment, industry, and academia. His research targets mainly the separation and recovery of functional macro- and micromolecules from different food by-products, as well as their implementation as additives in food and other products. He is the research and innovation director of Galanakis Laboratories (Chania, Greece) and the coordinator of Food Waste Recovery Group of ISEKI Food Association (Vienna, Austria). He serves as an editorial board member and subject editor of Food and Bioproducts Processing and Food Research International, and he has edited 6 books from Academic Press: Food Waste Recovery: Processing Technologies and Industrial Techniques (2015), Innovation Strategies in the Food Industry: Tools for implementation (2016) and Nutraceutical and Functional Food Components: Effects of Innovative Processing Techniques (2017), Olive Mill Waste: Recent advances for the Sustainable Management (2017), Handbook of Grape Processing By-Products: Sustainable Solutions (2017) and Handbook of Coffee Processing By-Products: Sustainable Applications (2017).

Olive Mill Waste: Recent Advances for Sustainable Management addresses today’s most relevant topics in olive oil industry sustainable management. Emphasizing recent advisable practices, the book explores the potential of reutilizing OMW to power the mill itself, the reuse of OMW as soil amendment, aerobic biological treatment of OMW and compost production, the case study of OMW within the biorefinery concept, the recovery of bioactive compounds from OMW, and their applications in food products and cosmetics.
